Spinach Croquettes
Ingredients:
9 oz flour
2 whole eggs
1 teaspoon baking powder
1 teaspoon chopped garlic
1/4 teaspoon hot pepper flakes
Salt and Pepper
2 ½ oz heavy cream
2 ½ oz olive oil
½ cup grated parmesan
1 lb. fresh spinach leaves
Mix all ingredients well by hand, shape into ping pong size balls and fry in a deep fryer.
Better if served with a tangy tomato sauce for dipping.
